Conserving and maturing
Kiwifruit will keep for several days at room temperature and for up to 2 or 3 weeks in the salad compartment of your refrigerator.
Kiwifruit is a fruit that matures slowly : we talk of maturing kiwifruit. During this time, the starch is converted into sugars and the aroma of the fruit develops ; after a few days, the fruit is perfectly ripe.
When is it ready to eat ?
It is just right for eating when slightly soft to the touch. If it is too hard, leave at room temperature for a few days, next to some apples. Avoid over-soft fruits which will have gone past the ripe stage.
In cooking
To extract juice from a kiwi, or make a coulis, use a mill rather than a mixer so you do not crush the small seeds at its centre.
(When crushed, the seeds release a tannin that leaves a bitter taste).
